If you’re in the mood for a comforting dish, White Chicken Lasagna is just what you need! This cozy meal is great for family dinners or when you want something warm and cheesy to enjoy.

This recipe addresses issues like achieving a creamy texture, preventing dryness, and reducing sticking in lasagna preparation.

Creamy White Chicken Lasagna - 1

Sometimes I struggle to find a dish that my whole family can eat, especially since my siblings have gluten allergies. This recipe is perfect for a meal that everyone will love, and it’s super easy to pull together!

This delicious lasagna takes just about 20 minutes to prep, and in 45 minutes, it can be bubbling away in the oven. The creamy cheese sauce helps keep everything moist, so it’s a win-win for flavor and texture!

If you’re looking for a pasta dish that’s equally tasty, why not try Cozy French Onion Pasta Bake? It’s another crowd favorite that’s packed with flavor!

  • Easy Prep , You won’t spend hours in the kitchen. The simple assembly means you can whip this up quickly, making it a breeze for busy nights.
  • Flexible Ingredients , You can easily swap in your favorite veggies if spinach isn’t your thing. It’s a great way to use up what you have on hand.
  • Great for Leftovers , Storing this lasagna is easy. Just pop it in an airtight container, and it’ll stay delicious in the fridge for a few days.

Ingredient Notes

Creamy White Chicken Lasagna - 2
  • Whole milk or half and half: This adds that creamy base that makes the lasagna so comforting. If you want it lighter, go for skim milk.
  • Cooked chicken: I love using leftover or rotisserie chicken for an easy shortcut. Just make sure it’s shredded or cut into bite-sized bits for even layering.
  • Shredded mozzarella cheese: The gooey, melty magic of this dish! Grab a block and shred it yourself for the best melt, or pre-shredded works too.
  • Ricotta cheese: This gives a nice creamy layer. Look for whole milk ricotta for more flavor, but low-fat could work if that’s your preference.
  • Baby spinach leaves: Fresh spinach adds a pop of color and nutrients. If you’re in a pinch, frozen spinach can also do the trick, just squeeze out the excess water!

Recipe Tips

  • If using a roux for the sauce, gradually whisk in about 2 cups of milk while cooking on medium heat to maintain a smooth consistency.
  • When preparing gluten-free noodles, cook until just al dente, about 2-3 minutes less than package instructions, to avoid hard layers after baking.
  • For softer vegetables, sauté thinly sliced options like spinach or zucchini in a little olive oil for 3-5 minutes before adding to the lasagna.
  • If the lasagna seems dry after baking, layering extra sauce in between noodles can help keep it moist.
  • When ready to serve, allow the lasagna to cool for 15-20 minutes, giving the layers time to set for easier slicing.

Serving Suggestions

  1. Serve white chicken lasagna with a fresh green salad for added nutrition and a helpful contrast. Garlic bread pairs well, adding a comforting element to the meal.
  2. This dish works well in various recipes, such as lasagna rolls or stuffed bell peppers, to utilize leftovers. Serve it in different ways or transform leftovers into a tasty chicken casserole for an easy meal idea.
  3. Top with fresh herbs like basil or parsley for an additional layer of flavor. Consider a drizzle of olive oil or a sprinkle of parmesan before serving to enhance the dish.

Storage Guidelines

  • To keep your white chicken lasagna fresh, follow these storage tips:
  • Refrigeration: Store leftovers in an airtight container in the refrigerator for up to 4 days. This prevents spoilage effectively.
  • Freezing: For longer storage, wrap portions tightly in aluminum foil or plastic wrap. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Reheating: Reheat in the oven at 350°F until warmed through, or heat in the microwave until hot. Enjoy promptly.

Recipe Variations

  • You can use ground turkey in place of the chicken for a lighter option.
  • Add ½ teaspoon garlic powder or ¼ teaspoon nutmeg for an extra layer of flavor.
  • Either layer in roasted red peppers or sautéed mushrooms for a different taste profile.
  • If making for a large group, double the recipe with 5 cups of milk, 4 cups of chicken, and 4 cups of cheese.

Equipment

  • Oven
  • 8 x 8-inch baking dish (20 x 20 cm)
  • Saucepan

Ingredients

  • 3 tablespoons butter unsalted
  • 2 teaspoons minced garlic
  • 3 tablespoons flour
  • 2 ½ cups whole milk or half and half
  • salt to taste
  • ¼ cup grated parmesan cheese
  • 4 ounces cream cheese softened
  • ¾ cup ricotta cheese
  • 1 large egg
  • 8 dried lasagna noodles cooked
  • 2 cups cooked chicken cut into bite size pieces
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 4 cups baby spinach leaves

Instructions

  • Start by melting the butter in a pan over medium heat. Once it is bubbling, toss in the minced garlic, letting it cook until fragrant, about 1 minute. Be careful not to burn the garlic, as it will change the taste.
  • Whisk in the flour, cooking for a couple of minutes until it is lightly golden. Gradually add in the milk while continuously whisking for a smooth texture. If it clumps, just keep whisking!
  • Stir in the grated parmesan and softened cream cheese until melted and well mixed. Ensure there are no lumps from the cream cheese.
  • Fold in the baby spinach leaves and let them wilt in the sauce for a couple of minutes.
  • In a separate bowl, mix the cooked chicken pieces with ricotta and egg. Ensure the chicken is fully shredded for even distribution.
  • In a greased baking dish, start layering by spooning some of the sauce on the bottom. Smooth it out before adding the cooked lasagna noodles.
  • Continue layering with the chicken-ricotta mix, sauce, noodles, and finish with shredded mozzarella.
  • Place the completed dish into the oven and bake until bubbly and golden, around 45 minutes. Let it cool for about 15-20 minutes before slicing to hold its shape better while serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days.
Use leftover or rotisserie chicken for convenience.
If the sauce thickens too much, keep whisking continuously while adding the milk to maintain a smooth consistency.
For gluten-free noodles, cook until just al dente, about 2-3 minutes less than package instructions, to avoid hard layers after baking.
To prevent the lasagna from becoming too dry, layer extra sauce in between noodles.
